No idea what I'm commenting on, really, but thought I'd chime in to vouch for the quality of little lab winery's excellent first production run. Gambei!

I wish I could try them sometime. Does ~70% H2O mean ~30% alcohol? if so, that's pretty strong!
The good wines we tasted on Sunday had about 13~14% alcohol. Since my rice wine was definitely stronger than any of those wines, I just gave it a random number 30%. Also, because Safety Officers didn't like our label of 20% EtOH for FPLC maintenance, I thought I should reverse my label to 70% H2O to avoid any potential problems stemmed from storing 30% alcohol in the same cold room.
Alas, I finally put our good old friend budding yeast into some good use.
